  1. One kilo of very ripe kiwis.
  2. 500 grams of sugar.
  3. The juice of one lemon.
  4. A teaspoon of agar.

Step-By-Step Preparation

The first thing to do is peel the kiwis and cut them into small pieces. It is unnecessary to dwell on this step too long; it is also okay to cut them roughly. Pour the articles into a saucepan with some lemon juice. Once this is done, we’re going to add the sugar, mixing everything. 

Remember that the mixture must rest for at least two hours, even if the ideal to enhance the flavour would be to leave it to rest overnight. After the rest time has elapsed, we will put the pot on the stove by bringing the mixture to a boil. As soon as it starts to boil, let it cook over low heat, constantly stirring at regular intervals to avoid burning the fruit. If you notice that too much foam has formed, then remove it with the help of a spoon.

While the jam is cooking, a fundamental step is to prepare the jars in which we will then go to the store. They must be glass, and make sure they are not cracked or warped. They will be put in the oven at 180 degrees and then dried after a thorough washing while we boil the lids of the jars to avoid contact with microbes.

As soon as the jam is cooked and has acquired the desired consistency, we will remove it from the heat. This step can take up to 45 minutes, as the fruit has to blend almost wholly. At this point, we can add agar to obtain a consistency as similar as possible to the classic jam; alternatively, we can achieve this with the help of the hand blender. The last step is to distribute the jam between the various jars, seal them, and then boil them in a bain-marie to create the vacuum effect. Finally, we can keep our kiwi jam in the pantry, in a cool and dry place.
